1 large yellow onion, diced
1 red bell pepper, diced
2 jalapeño, seeded and diced
5 ribs celery, diced (

2 Tbsp smoked paprika
1 ½ tsp cardamom

¼ tsp cayenne pepper
1 tsp oregano
